I cannot go past carrots as a vegetable they are definitely a favourite of mine and grow well for me most of the year.

Carrots are an antioxidant vegetable, rich in phytochemicals, beta carotene, vitamins A, B1,B2, B3, B6, C, E and K. They are high in fibre, folate, manganese, molybdenum, phosphorus and potassium.

Carrots are attributed to assisting with many health issues, such as  improving the immune system and regulating blood sugar due to the antioxidants and phytochemicals they contain.

Carrot and Watercress

Carrots on the sideSteam Carrots until lightly cooked.

Place in a bowl, drizzle with garlic infused olive oil, salt & pepper and a good squeeze of lemon juice, lightly toss.
Top with finely chopped green tops of spring onions, parsley, & watercress.

Sautée Carrots in a little coconut oil, salt, pepper and chopped green tops of spring onions. When the carrots are tender add a hand full of fresh chopped coriander, a small roughly chopped lebanese cucumber and a dash of tammari or balsamic vinegar.
