Chocolate Custard Surprise

Gluten and Lactose Free

Home made whole egg custard with vanilla bean and caco
Biscuit base made from homemade gluten and lactose free bread crumbs

To made the base you will need
2 cups gluten free bread crumbs
1 quarter cup butter or dairy free spread
1 quarter cup smooth peanut butter
2 table spoons raw sugar
1 teaspoon fresh ground cinnamon

Method
Melt the butter and peanut butter
Put dry ingredients in a bowl and mix in the wet ingredients
Oil your baking dish and place mixture in the bottom
Cook at 180c for 10 mins
Allow to cool

A layer of cooked cherries and raspberries

Once cooled spread cooked fruit of your choice and top with custard

Top with Custard

To Make the Custard you will need (this is a lazy custard recipe
1 half cup gluten free cornflour
1 quarter cup raw sugar
2 table spoons caco or chocolate powder
2 whole large eggs
A few drops of Vanilla Essence
750 mils lactose free milk

Method
Place all of the ingredients in a heatproof bowl
Mix together with a stick blender until smooth
Cook in microwave for 2 mins then remove and mix again with stick blender
Repeat until thick depending on you microwave you will need to repeat this process at least 3 or 4 times
Add more milk if you prefer a thinner custard
When the custards has cooled a little pour over the base and fruit

Dust with wheat free icing sugar and flaked almonds

Once the dish has cooled place in the refrigerator for an hour
When you are ready to serve up dust with wheat free icing sugar and flaked almonds then sprinkle a few edible flower petals, I used Dianthus.
